Xanthophylls are carotenoid pigments (also found in marigold petals and egg yolks) that fish can’t synthesize themselves but absorb from feed, deepening natural red, orange, and yellow coloration. This is the active ingredient behind most ‘color enhancing’ koi and goldfish foods, it doesn’t create color that isn’t already there genetically, but it does bring it out more fully.
